Rainbow Macaron Cupcakes – A Colorful Birthday Surprise

There are baking projects that fill your kitchen with delicious aromas—and then there are the ones that fill your heart, too.
This week, I had the absolute joy of making something special for a friend’s child’s birthday: rainbow macaron cupcakes! While I don’t usually make cupcakes as part of Seaside Magnolia’s offerings, this was a heartfelt exception. I couldn’t resist the chance to create something so magical, colorful, and full of personality.
Here’s what went into them:
Each cupcake started with a soft, vanilla base, baked in vibrant rainbow liners. I topped them with a swirl of Swiss meringue buttercream, tinted in all the rainbow shades and piped using a 1M tip to get that classic, dreamy swirl. But the real fun started with the toppings.
Each cupcake was crowned with a macaron in either orange guava or lemon, nestled on top like a jewel. Then I added rainbow sprinkles, edible butterflies, edible glitter, and a touch of edible gold—because more is more when it comes to birthday magic!
It was such a joy watching this vision come to life. The colors, the sparkle, the detail—it all came together in the most whimsical way. Even though these aren’t available for order (just a fun, one-time project), it was a beautiful reminder of why I love creating edible art. It’s not just about the dessert, it’s about making moments a little more magical.
