Storage: Store the mayonnaise in an airtight container in the refrigerator for up to 1 week.
Ingredients:
1 whole egg
1 cup neutral oil (such as canola, sunflower, or vegetable oil)
1 tablespoon vinegar (white or apple cider)
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon dry mustard
Instructions:
Add the whole egg, vinegar, lemon juice, salt, sugar, and dry mustard in a tall, narrow jar or container.
Pour the neutral oil on top of the other ingredients.
Place the hand blender at the bottom of the jar, ensuring the egg is beneath the blades.
Turn on the blender and blend on high, keeping the blender in place at the bottom for about 10 seconds until you see the mixture emulsify.
Slowly lift the blender while blending, moving it up and down gently until the mayonnaise reaches the desired consistency.
Taste and adjust the seasoning if needed.
Tips:
Add a little more oil or blend for a few more seconds for a thicker mayo.
Ensure all ingredients are at room temperature to help the emulsification process.
Flavor Combinations:
Garlic Herb: Add 1 minced garlic clove and 1 tablespoon of fresh chopped herbs like parsley, dill, or chives.
Spicy Sriracha: Mix in 1-2 teaspoons of Sriracha or your favourite hot sauce.
Lemon Pepper: Add 1 teaspoon of lemon zest and 1/2 teaspoon of freshly cracked black pepper for a zesty twist.
Chipotle Lime: Add one teaspoon of chipotle chilli powder and an extra teaspoon of lime juice for a smoky, tangy flavour.
