These Maple Bacon Brussels Sprouts are a delicious blend of sweet and savoury, with crispy bacon adding the perfect crunch. A family favourite, especially loved by my mother-in-law, this dish brings a touch of warmth and comfort to any meal. The caramelized Brussels sprouts, coated in rich maple syrup, create a perfect balance of flavours that will have everyone reaching for seconds.

Ingredients:
1 lb Brussels sprouts, trimmed and halved
4-6 slices of thick-cut bacon, chopped
2 tablespoons olive oil
1/4 cup pure maple syrup
Salt and pepper to taste
1/4 teaspoon red pepper flakes (optional, for a bit of heat)
1 tablespoon balsamic vinegar (optional for added depth of flavour)
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Brussels Sprouts: Place the trimmed and halved Brussels sprouts in a large mixing bowl. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
Cook the Bacon: In a large oven-safe skillet or cast-iron pan, cook the chopped bacon over medium heat until it's crispy. Remove the bacon with a slotted spoon and set it on a paper towel-lined plate. Leave the bacon fat in the pan.
Sauté the Brussels Sprouts: Add the Brussels sprouts, cut side down, to the pan with the bacon fat. Sauté them over medium-high heat for 4-5 minutes until they start to brown.
Add Maple Syrup: Drizzle the maple syrup over the Brussels sprouts, stirring to coat them evenly. If using red pepper flakes for a bit of heat, add them now.
Roast: Transfer the pan to the preheated oven and roast for 15-20 minutes, stirring halfway through, until the Brussels sprouts are tender and caramelized.
Finish with Bacon and Vinegar: Once the Brussels sprouts are done, remove the pan from the oven. Stir in the crispy bacon and, if desired, drizzle with balsamic vinegar for an added depth of flavour. Toss everything together.
Serve: Serve the Maple Bacon Brussels Sprouts hot as a side dish. They pair wonderfully with roasted meats or as a standalone snack.
Tips:
For extra caramelization, roast the Brussels sprouts a little longer.
You can add chopped pecans or walnuts for added texture and flavour.
