Cozy up with this savoury Instant Pot Beef Dip—a fall and winter comfort food that's perfect for warming up your family. Tender beef is slow-cooked to perfection and served with a rich au jus for dipping, making this dish a heartwarming favourite on chilly evenings.

Yields: 4 sandwiches

Servings: 4

Prep Time: 10 minutes

Cooking Time: 45 minutes (including pressure build-up and release)

Total Time: 55 minutes

Ingredients:

  • 2 lbs beef chuck roast, cut into chunks

  • One onion, sliced

  • Three cloves garlic, minced

  • 2 cups beef broth

  • 1/2 cup soy sauce

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • Salt and pepper to taste

  • 4-6 hoagie rolls

  • Provolone cheese slices (optional)

Instructions:

  1. Set your Instant Pot to sauté mode and brown the beef chunks on all sides. Remove and set aside.

  2. Add the sliced onion and garlic to the pot, sautéing until softened.

  3. Return the beef to the pot and add the beef broth, soy sauce, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir well.

  4. Seal the Instant Pot lid and cook on high pressure for 60 minutes. Allow a natural release for 10 minutes before quickly releasing any remaining pressure.

  5. Remove the beef from the pot and shred it with two forks.

  6. Strain the liquid to remove the solids, creating a rich au jus for dipping.

  7. Serve the shredded beef on hoagie rolls, with provolone cheese if desired, and a side of au jus for dipping.

Tip: Place the assembled beef dip sandwiches under the broiler for a few minutes to melt the cheese and toast the rolls for an extra crispy sandwich.
