Ingredients:

  • 400g spaghetti

  • 200g guanciale diced

  • 100g Pecorino Romano cheese, finely grated

  • Four large local eggs

  • Freshly ground black pepper

  • Salt, to taste


Instructions:

  1. Prepare the Pasta: Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente.

  2. Cook the Guanciale: While the pasta is cooking, heat a large skillet over medium heat. Add the diced guanciale and cook until it is crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

  3. Beat the Eggs: In a bowl, beat the eggs and mix in the grated Pecorino Romano cheese. Season—season with a generous amount of freshly ground black pepper.

  4. Combine Pasta and Guanciale: When the pasta is done, reserve a cup of the pasta water and drain the spaghetti. Add the hot pasta to the skillet with the guanciale and toss to combine.

  5. Create the Sauce: Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. Add reserved pasta water a little at a time if the sauce is too thick.

  6. Serve: Serve immediately, garnished with additional grated Pecorino Romano and a sprinkle of black pepper.
