Close-up image of a roasted garlic bulb cut in half, with caramelized, golden brown garlic cloves and olive oil dripping down, placed on a rustic wooden surface.

Living in the Cowichan Valley, we are surrounded by beautiful seasonal fruits, vegetables, and herbs from local farms. Garlic season is a favourite for my husband and me, and we particularly love Russian garlic.

Recipe

Ingredients:

  • one head of fresh local garlic (preferably Russian garlic)

  • two tablespoons of extra virgin olive oil

  • Salt to taste

  • Freshly ground black pepper to taste

  • Fresh Herbs (optional)

Instructions:

  1. Preheat your air fryer to 380°F (193°C).

  2. Cut the top off the head of garlic to expose the cloves.

  3. Drizzle the olive oil over the garlic head, ensuring it seeps into the cloves.

  4. Sprinkle with salt and freshly ground black pepper. Add Herbs.

  5. Wrap the garlic head in aluminum foil and place it in the air fryer basket. Or bake in a Terracotta Garlic Baker.

  6. Air fry for 15-20 minutes or until the garlic is soft and caramelized.

  7. Let it cool slightly, then squeeze the roasted garlic out of the cloves.

  8. Use immediately in your favourite dishes or store in an airtight container in the refrigerator for up to a week.

Serving Suggestion: We love to use this roasted garlic with balsamic vinegar and dip fresh breads from the local bakeries.

Tip: For an extra touch, use a terracotta garlic baker for roasting. It enhances the flavor and texture of the garlic, making it even more delicious!
