Ingredients:
1 cup of local honey (preferably from Nielsen's Honey)
2-3 tablespoons of red pepper flakes (adjust to taste)
1 tablespoon of apple cider vinegar
A pinch of salt (optional)
Instructions:
In a small saucepan, combine the honey, red pepper flakes, apple cider vinegar, and a pinch of salt (if using).
Heat the mixture over medium-low heat, stirring occasionally. Be careful not to boil the honey, as it can scorch easily. Let it simmer for 10 minutes to infuse the honey with the spicy flavour.
Remove the saucepan from the heat and allow the honey to cool slightly. Taste and adjust the level of spiciness by adding more red pepper flakes if desired.
Once cooled, strain the honey through a fine mesh sieve to remove the pepper flakes if you prefer a smoother texture. Alternatively, you can leave the flakes in for an extra kick.
Pour the hot honey into a clean jar or bottle and store it at room temperature. It will keep for several months.
Tips:
This hot honey is drizzled over fried chicken, pizza, or roasted vegetables.
For a unique twist, try adding a clove of garlic or a sprig of fresh thyme during the simmering process, and remove it before bottling.
